Wow! You already gave me new ideas.
We are on the low cholesterol diet so we try to avoid meat snacks such as beef jerky (yummy however!). Here are a couple of snacks that will not go bad with heat (reasonable heat do not leave them under the sun!):
1. Pasteli (Sesame Seed & Honey Snacks): http://greek.food.com/recipe/greek-p...-snacks-326367

3. Spinach pie or cheese pie is preserved very well too. It is not too tough to make although a bit tedious. Maybe we should make a Greek pie clinic instead of all these regulator clinics.
You can find the pasteli and tahini halva snacks at whole foods or any Lebanese type of market. They are really good if you have limited time to make these. Sesame and tahini are very filling, low cholesterol. Watch the calories though!
When we go on a dive trip I make something vegeterian on the slow cooker and I take it with us. Last time I made cowboy caviar. This is classic american recipe but I avoid avocado, I only have black eye peas, black beans, corn, coriander, and celery in it with lots of olive oil and white balsamic. Take your time working back into the groove but stick to the diet.
It can really take a while to get used to a new diet but when you can snack just on healthy stuff it is easier.
