I dont know much about the panhandle, but there are 2 basic types of crayfish in Fl. The link
given by skip shows 2 pictures, the top one is the commom type, largely similar to the very common procambarus pallidus in central FL. The bottom picture shows the troglocambarus type. They are recognized by the extremely delicate look and the needle- like pinchers. If yours looks like the top picture, my best guess would be it is procambarus orcinus. Used to be a two legged variety around there know as latenighticus lucifugus (lucifugus is a real niame, means light-fleeing![]()
