"Mountain biking" may have originated in the mountains, but the term now refers to riding on a natural surface trail--preferably singletrack!
I live in the Piedmont of VA and do a lot of mountain biking here. I rode Santos once. It was OK, and I figured it was probably the best Florida had to offer, but it didn't come close to what we have up here.
I believe Rich Edwards of IMBA was involved in building Santos. He's from Virginia and *really* good. I think of him as the trail whisperer.
I used to do a lot of mountain biking in WI. and trips out west to the Rockies, so I didn't expect to find any challenging off-road riding in FL.. I did find that Hanna Park in Jacksonville has 15 miles of mostly single track that was quite enjoyable. Of course, there are no big climbs, but lots of short, steep ones with lots of twists and turns. Also, the San Felasco Hammock Preserve near Gainesville has some decent trails, not much ST, but more hill than you would expect in Fl..
There's some good mountain biking in Florida. The best part - NO HILLS!

At the Workshop BBQ in Tally, I walked over to the restrooms. There was a guy who was just loading his bike after his ride so I struck up a conversation with him. He raved about the trail at that park.
I am at the young age of 52 and I will not stop cave diving until I'm dead. If necessary I will hire young beautiful women to carry my equipment to the water.

Which one - Hanna or San Felasco? Probably the former - it is really interesting riding single track through tropical vegetation, most of which leaves you bleeding or stinging if you touch it.
It is interesting that in sports such as biking, running etc., older participants are encouraged and praised for their efforts. I wonder why that doesn't seem to be the case in diving?

From my house to the post office in the village is a mile - and 510 vertical feet. Paved in the village, dirt up to the house. Sometimes I walk down or ride my bike to pick up the mail. All downhill there, and all uphill on the way back. Being congenitally lazy, I'd enjoy a break from hills!
