Yep, slow cook it keeping it moist, or cook it very fast. Possum and Raccoon are far tougher to make palatable, they're tough, greasy and have a strange aftertaste.

Too many people ruin snake meat by frying it; if you want it fried you need to keep the grease from getting too hot. Not too bad pan frying in some olive oil and butter. I will agree with you on the possum, but obviously you have never eaten any coon prepared by a cajun. With the right spices, coon can be turned into a real delicacy 8) If you really want to eat some possum, pen raise one so you can control what they eat; it will still tend to be a bit greasy, but it will taste somewhat better.

I believe the definition of "delicacy" is, this stuff tastes so horrendously bad that we have to come up with a reason why we are eating it.

Yet another that has never tasted what a cajun can do to most any critter it can get a hold to. We need to do a road trip over to LA.

Just a warning Jack, never put down someones land. Besides we have a heck of a lot up here beside deer flies! One we have the biggest mall in america, soon to be the largest in the world. We have many beautiful lakes. We even have lake superior, sounds to me like we have alot! At least we don't have the recluse spider up here, the one with the violin on his back end. & I'm sorry, I hadn't intended to dis-respect your 'Bath Tub' {Lake Superior} but then the notorius Minnesota Deer Flys are bad up there......you'll have to admit that-! BTW, how do you cook 'wild kills' such as Duck & Coon up in your neighborhood-?
