Okay, was I hallucinating or was there a lobster at the bottom of open water in Devil's Eye? If it wasn't a lobster it was the biggest crayfish (Head to Tail about 8") I've ever seen. Not a Florida Spiney, but one with claws.

Yes, you were hallucinating. Probably the result of loss of blood flow from a combination of having to mortgage your home to afford to dive at Ginnie, and swimming through clouds of beer infused redneck urine in the Devil's run. Either that, or it is one of those flashbacks that we were all warned about years ago.
pretty big crayfish, but they can get big. I forget what the biggest ones are, but it sounds like you found it! There are 55-58 species of crayfish in florida. Here's a link to an illustrated guide:
