Does anyone know of an open water site (spring etc. ) in cave country that could be used for rebreather training. It needs to be about 100' depth and large enough to swim around?

A few years ago I got trained on the Dreager and did my training in Troy springs...open water and 90-100'. Also Catfish Hotel at Manatee exceeds 90' in open water.

I think we got a max depth of about 76' at Troy even diving the cave. In the open water there might have been a spot that was slightly deeper but I doubt you'd break 80' unless the water was up quite a bit.
To hit 90' at Catfish you're in either the upstream or downstream passage, 70' in the cavern and most of the OW runs 20-50'.
Still Troy and Catfish are the two spots I'd first think of.
Orange Grove gets to near 70' while silll in OW also - another posibility.

Well you could go to Blue Grotto it is still somewhat a open water dive.

What about 40 fathom grotto, or the OW area of Eagle's nest (training my not be allowed, even if you are only in OW there..)?
You can get the 100’ OW depth and the area to swim around in at 40 Fathom Grotto, but your Instructor needs to be a guide at the Grotto. Make sure you get a current visibility report before you decide to do your training at 40 Fathom Grotto.

I dont think they just fell, but yes there is a boat and some other stuff as well.

I agree, most of the stuff was intentionally put into the grotto. Some of the stuff includes dive platforms, pontoon boats with tank racks, boats, an airplane, a tow scooter, a motorcycle, a van, a refrigerator, street signs, and lots of cars.
